On Outbound Traffic source NAT you have source subnet the same size as SNAT? And changed Destination NAT?

That's tonight's task. Been on phone with ISP for hours because, of course, since we can't reproduce with a single laptop connected to their modem - not their problem even though the packet loss clearly starts at their x.x.x.1 gateway. Trying to get them to understand that there's clearly some 'trigger' 5-30 minutes after we reset the WAN link and our business traffic clearly is the trigger. So a singel laptop may never trigger it, but our business clearly does. Will keep you all posted!

It's unclear why your Wi-Fi adapter can't detect the 5G Wi-Fi broadcast from your Android mobile. Not all Wi-Fi adapters are compatible with all devices, and some may not work with certain types of phones or operating systems. Additionally, the sharing station on the mobile device may have network configurations that aren't compatible with the Wi-Fi adapter, such as security settings or network protocols that the adapter doesn't support.
You could try broadcasting the Wi-Fi signal from other Android mobiles and see if the adapter can detect the SSID in the wireless network. If the adapter can detect the SSID from another mobile, it's likely a compatibility issue between the adapter and the mobile.

Re: Turn off QOS on switch GS-108S v2

The GS-108S v2 switch is an unmanaged switch and does not have the capability to turn off QoS.
If you require the ability to turn off QoS, you will need to consider using a managed switch such as the Zyxel GS1200 series. Managed switches provide more advanced features, including the ability to configure QoS settings.
