The output of 'mdadm --examine' is interesting. Here the 'Array State' tells what the separate members 'think' about the state of their array, and 'Update Time'…2 -

If you (or somebody you pay for it) fail in re-assembling or re-creating the array, and you have no backups, the data is lost. *A* disk can be integrated, which means that all parities are calculated…1 -

As far as I know, no. It doesn't really matter for the way how to mount it. Only if it's raid1 you only need to connect 1 disk to mount a (degraded) array. But 2 disks won't hurt.1
