I had the same issue, but it did allow me ot create a new APN. Although it takes you back to the standard EE one once its been saved, which is confusing. However, it then lets you select the new one and you can make it default.
I would like to install the standard firmware. However, there is no option to do this, is there any guidance on doing this?

@BruCom Glad I convinced you we are all facing the same issue shared by both LTE5398 and LTE5388… and most certainly some others (I noticed a few other messages in forums which seem describe a similar unwanted behaviour).
@BruCom @RobTheNetworkGuy Did you also noticed that any existing TCP connection established was still working? This means that the IPv4 stack is still working, pretty strange. I'm out of home for a few more days and cannot test, but I wonder if ICMP would work
Some LTE providers internaly "block" connections after 12 or 24 hours to avoid permanent users. In these situations, users have to disconect and reconnect to fix this. And in the mean time, LTE seems to be established and existing connections are kept (only new TCP is blocked). I wonder if it could be something like this which happens to us. Anyway, the IP monitoring watchdog would detect and fix it easily.

But from what I see you want subnet 192.168.94.0/24 to connect to this 192.168.0.102? so are devices on 192.168.94.0/24 have gateway to the bridge IP?

Sorry to hear that. To me, it looks like your device is bricked and cannot be reset. Unless your device is under warranty, you may need to replace it with a newer and working device. I am 90% sure that there is no coming back from the scenario you described.
( I could be wrong, but it looks like your device is in deep water.)

You could theoretically be in a situation where parts of the system board is defective and can not be reset.
Even so, you should try to reset the device even more diligently by applying the "30-30-30 Hard Reset" procedure:

While working with a finicky cMP Link Aggregation problem I noticed some ports were dropping. A restart didn't fix the problem, so I did a factory reset using the side button.
After the reset I navigated to 192.168.1.1 and LO! I now have downgraded my CS1920-48 to a GS1900-HP.
This I have rebooted and reset a number of times, and have tried to upload the last most recent firmware for the 1920. No go; it's stubbornly sticking to the GS1900-HP web ui.
How do I proceed to recover from this?
edit: FWIW I can no longer access this webUI via firefox as this firmware is using really old encryption standards.
