Since the reboot happens with a SIM inserted then I can only think that it is related to when it tries to activate the PDP context on the APN.
Do you have a SIM card that only supports 3G and 4G to see if it is related to the connection to 5G WWAN only or not?
These are just some thoughts from someone who is a Zyxel user.

Thank you for your suggestion, I am afraid that did not solve the problem. I now have only ipv4, with a manual apn, but the problem still exists.

many thanks for the link to the firmware. Unfortunately the firmware version V5.50(ABPM.6)b5_V0_20210906 can not be replaced by the one, i found at your link, it means version V5.50(ABPM.6)C0. The modem reject this firmware.
Do you have any other suggestions what to do?

According to the user guide for NR5101 available at https://support.zyxel.eu/hc/en-us/articles/4403365084818-5G-Devices-Advanced-Downloads-Firmwares-and-other-resources- the NR5101 supports SIP and VoIP.
VoLTE is also supported.

Welcome to the Zyxel community. You could add IP Exception profiles to define which host could bypass the URL Threat Filter's inspection. As the below example, I configure a host(with IP address 192.168.66.88) that could bypass Anti-Malware, URL Threat Filter, and IPS inspections.
Add an address object.


Add an IP exception profile to define the host that could bypass Anti-Malware, URL Threat Filter, and IPS inspections.

You could define the whole lan to bypass URL Threat Filter's inspection as well.
Add an address group object.

Choose which address object you would like to add as a group.

Add an IP exception profile to define the address group that could bypass the URL Threat Filter
inspection.

Alright, with 2 days of investigation I found out a solution.
NSU is absolutely useless to solve this case, even the network searching. However the path exists. you have to "guess"/manually type the access path in the settings:

\\"type of your nas"\"name of your folder"
in my case it was \\nas326\admin-1
For me, it was working....
