How could I check if the MESH AP is connected with Ethernet or with wireless to USG LITE60AX?

To verify the AP is connected with Ethernet or Wireless, you can navigate to
Side-wide > Device > Access points

The icon indicates that the AP is wirelessly connected to the router using mesh technology.
