Setting up VLAN on GS1900-48HP

We employed a company to set up CCTV and POE switches and VLANS but they disappeared before completing the job. I have 12 switches around school and I have never used ZyXEL products before.
I have managed our network for 10 years but have no experience of setting up VLANS. I've tried but just manage to disable our network...
We're currently replacing our old phone system and want to set up a VLAN for the VOIP traffic. Would someone be able to advise me on how to do this (on a very basic level)?
The phones will just connect to the nearest switch, so I'll have 39 phones connected to 12 switches. Is it possible to create a VLAN for this traffic?
