Since installing the Fall Windows 10 update I am unable to access my NSA310 and NS320 NAS drives form my Windows machine - it says because they use SMBv1. Anyone had a similar problems or know if/when Zyxel will be issuing a firmware upgrade to SMBv2 or 3? What shall I do in the meantime?

No, there won't come a new firmware for the 310 and 320, because these boxes are EOL.
There is a work-around for your problem, but it needs some tinkering:
